  • 2 (15 oz) cans cannellini beans, drained and rinsed
  • 2 ½ cups shredded cooked rotisserie or leftover chicken
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped fresh cilantro, plus more for serving
  • Optional toppings: tortilla chips or strips, Monterey Jack cheese, sliced avocado

Instructions

  1. Sauté diced onion in olive oil until softened. Add minced garlic and cook briefly.
