  • 2 tablespoons granulated sugar
  • 1 1/2 cups crushed shortbread cookies or graham crackers
  • 1/4 cup unsalted butter (melted)
  • 6 large crepes

Instructions

  2. In another bowl, whip heavy cream to stiff peaks and fold into the cream cheese mixture.
  3. Toss diced strawberries with sugar and let sit for about 10 minutes to macerate.
  4. Combine crushed cookies with melted butter until it resembles wet sand.
  5. Lay a crepe flat, spread cheesecake filling over it, sprinkle shortcake crumbs, and add macerated strawberries. Roll tightly from the strawberry edge.
