Instructions

  1. Preheat oven to 350°F (175°C). Prepare a loaf pan with parchment paper and non-stick spray.
  2. In one bowl, whisk together flour, pudding mix, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs, sugar, butter, vanilla extract, lemon juice, vegetable oil, and Greek yogurt until blended.
