- 2 tablespoons canola or vegetable oil
- 1 cup full-fat canned coconut milk
- 2 tablespoons sambal oelek (adjust for spice level)
- 4 teaspoons red curry paste
- 1 cup thinly sliced shallots
- 2 tablespoons minced ginger
- Garnish: scallions, red pepper flakes, toasted sesame seeds
Instructions
- Press and cube the tofu into 1-inch pieces.
- Heat oil in a non-stick skillet over medium-high heat and fry tofu until golden brown on all sides (about 3 minutes per side).
- In another skillet, sauté shallots in coconut oil until softened, then add ginger and cook until fragrant.
- Stir in coconut milk, sambal oelek, curry paste, salt, and sugar; simmer for about 4 minutes until slightly thickened.
- Combine fried tofu with the sauce and garnish before serving hot.
