- In a large bowl, mix water, sourdough starter, and salt. Stir to combine, then add flour and mix until fully incorporated. Cover and let rest for 30 minutes.
- Perform stretch and folds by grabbing the dough's edge, stretching it upward, and folding it under itself. Rotate the bowl and repeat for four total folds. Rest for 20 minutes and repeat this process three more times over one hour.
- Let the dough bulk ferment for 3–4 hours at room temperature until nearly doubled in size.
- Shape the dough into a tight ball and place seam-side up in a floured banneton basket. Let rise for another 2 hours.
- Preheat your oven to 460°F (238°C) with the dutch oven inside during the final proofing hour.
- Transfer the dough onto parchment paper, score with a knife, and place in the preheated dutch oven with water for steam. Bake covered for 30 minutes, then uncover and bake an additional 10 minutes until golden brown.
- Cool on a rack for at least one hour before slicing.
