Instructions
- In a large bowl, mix water, sourdough starter, and salt until combined. Gradually add flour and mix until no dry flour remains.
- Cover the dough and let it rest for 30 minutes.
- Perform stretch and folds: Grab edges of dough, stretch upward, and fold under. Rotate bowl 90° and repeat for four total folds. Rest for 20 minutes between sets.
- Let the dough rise at room temperature until nearly doubled (approximately 3–4 hours).
- Shape the dough into a smooth ball on a floured surface and place it seam-side up in a floured basket. Let it proof for another 2 hours.
- Preheat your oven to 460°F (238°C) with a Dutch oven inside.
- Score the dough, transfer it to parchment paper, and bake covered for 30 minutes; then uncover and bake an additional 10 minutes at 440°F (227°C).
- Cool on a rack before slicing.
