  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • ½ cup milk
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 cup frozen corn
  • 4 cups sliced potatoes (about 1.5 pounds)
  • 1 cup shredded cheese (cheddar or your choice)

Instructions

  1. In a skillet over medium heat, brown the ground beef with chopped onion and minced garlic until fully cooked. Drain excess fat.
  2. Transfer the beef mixture to a slow cooker and add cream of mushroom soup and milk. Stir in kidney beans, diced tomatoes, frozen corn, chili powder, salt, and pepper until well combined.
  3. Layer the sliced potatoes over the beef mixture.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.
