  • Kosher salt and freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon butter
  • 3 garlic cloves, minced
  • 1 tablespoon all-purpose flour
  • 1 1/4 cups heavy cream
  • Juice and zest of 1 lemon
  • 2 tablespoons chopped fresh dill

Instructions

  3. Remove the salmon from the skillet. In the same skillet, melt butter, sauté garlic for 30 seconds, then stir in flour to form a roux.
  4. Gradually whisk in heavy cream, cooking until thickened (3-4 minutes). Add lemon juice, zest, and dill; adjust seasoning.
  5. Return the salmon to the skillet and spoon sauce over it, simmering gently for 2 minutes to warm through.
