  • 4 cups cooked brown or white rice
  • 1 lb boneless, skinless chicken thighs
  • 3 tablespoons coconut oil
  • ½ yellow onion
  • ½ green bell pepper
  • ½ red bell pepper
  • 1 garlic clove
  • 1-inch piece fresh ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1½ cups cubed pineapple
  • ¾ cup frozen peas
  • Juice of 1 small lime

Instructions

  1. Season chicken with salt and let sit for 10–15 minutes.
  2. Heat 2 tablespoons coconut oil in a large skillet over medium heat. Cook chicken until no longer pink (about 5–7 minutes). Set aside.
  3. In the same skillet, add remaining coconut oil and sauté onion for 3–4 minutes. Add bell peppers, garlic, and ginger; cook for another 2–3 minutes.
  4. Deglaze the pan with soy sauce, then stir in rice, honey, pineapple, and cooked chicken. Cook on low heat for about 5 minutes until heated through.
  5. Stir in frozen peas and lime juice before serving warm.
