  • 8 ounces fresh mushrooms, thinly sliced
  • 1 large green bell pepper, finely chopped
  • 1 large onion, finely chopped
  • 2 tablespoons unsalted butter
  • 1 cup provolone cheese, diced or shredded

Instructions

  1. Cook rigatoni in salted boiling water until al dente; drain and set aside.
  2. Brown ground beef in a skillet over medium heat; season with salt and pepper. Remove and set aside.
  3. Sauté mushrooms, bell pepper, and onion in the same skillet until softened. Add garlic and cook for an additional 30 seconds.
  4. In a separate skillet, melt butter and whisk in flour for one minute. Gradually stir in milk and half-and-half; simmer until thickened.
  5. Stir in provolone cheese until melted. Combine cheese sauce with cooked pasta, half of the beef, and vegetable mixture.
