  • 2 tablespoons olive oil
  • 6 chicken thighs (skinless, bone-in)
  • 1 1/2 cups long-grain rice (uncooked)
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 1/2 cups vegetable or chicken stock (hot)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 350°F (180°C).
  2. In a mixing bowl, whisk olive oil, salt, pepper, smoked paprika, thyme, oregano, and garlic granules. Add chicken and coat well.
  3. In an 8×12-inch baking dish, combine diced onion, minced garlic, olive oil, melted butter, hot stock, water, rice, salt, and pepper.
  4. Place seasoned chicken on top of the rice mixture.
  5. Cover with foil and bake for 30 minutes; then uncover and bake for another 30 minutes until chicken is crispy.
  6. Let rest for 10 minutes before serving; garnish with fresh parsley.
