  • 2 ½ tablespoons butter (melted)
  • 2 (8 oz) packages cream cheese (softened)
  • 2 eggs
  • ⅔ cup sugar
  • ⅔ cup sour cream
  • 1 teaspoon vanilla extract
  • 12 Oreos (chopped for filling)
  • 1 cup dark chocolate chips (for ganache)
  • 2 to 3 tablespoons heavy cream (for ganache, optional)

Instructions

  1. Preheat oven to 350°F. Prepare a springform pan by lining the bottom with parchment paper and wrapping the outside with aluminum foil.
  2. Crush the Oreos and mix with melted butter until combined. Press into the bottom of the prepared pan and bake for 8–10 minutes.
  3. Lower oven temperature to 325°F. In a mixer, blend softened cream cheese, eggs, sugar, sour cream, vanilla extract, and salt until smooth.
  4. Fold in chopped Oreos gently. Pour the batter into the crust and tap to release bubbles.
  5. Place the springform pan in a large roasting dish filled with hot water halfway up its sides. Bake for 75 minutes.
  6. Turn off the oven and crack the door open; let cheesecake cool for an hour inside.
  7. Chill in the refrigerator for at least 4 hours or overnight before serving.
