  • 32 Lotus Biscoff cookies (8.8 ounces)
  • Optional: 2 tablespoons Biscoff cookie butter for decoration

Instructions

  1. Prepare a baking sheet by lining it with parchment paper.
  2. In a food processor, pulse the Lotus Biscoff cookies until they become fine crumbs.
  3. In a microwave-safe bowl, warm 1/4 cup of cookie butter for about 15-20 seconds. Stir in softened cream cheese and mix well.
  4. Combine the cookie crumbs and the cream cheese mixture in the food processor and pulse until fully combined into a thick dough.
  5. Roll the dough into 1-inch balls and place on the prepared baking sheet. Chill in the fridge for at least an hour.
  6. Melt white chocolate in the microwave in 30-second intervals until smooth.
  7. Dip each truffle ball in melted chocolate using a fork and return to the baking sheet.
  8. Chill again until chocolate is set, then optionally decorate with additional melted cookie butter.
