  • 1 cup carrot matchsticks
  • 1 medium onion
  • 3 large garlic cloves
  • 3 tablespoons tomato paste
  • 1/3 cup sun-dried tomatoes in oil
  • 10 cups low-sodium chicken broth
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/8 teaspoon red pepper flakes
  • 1 cup ditalini pasta
  • 1/3 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 handfuls baby spinach
  • 1 tablespoon oil (for frying)
  • 2 tablespoons fresh parsley or basil (for garnish)

Instructions

  1. Preheat a large pot over medium-high heat and add oil.
  2. Sauté carrots, onion, and garlic for about 3 minutes until fragrant.
  3. Add chicken pieces and sauté for an additional 3 minutes until lightly browned.
  4. Stir in tomato paste, sun-dried tomatoes, chicken broth, Italian seasoning, salt, pepper, and red pepper flakes. Bring to a boil.
  5. Reduce heat to low and simmer for about 10 minutes.
  6. Add ditalini pasta; cover and simmer another 10 minutes while stirring occasionally.
  7. Incorporate heavy cream, Parmesan cheese, and spinach. Let sit for about 5 minutes off the heat.
  8. Garnish with parsley or basil before serving hot.
