  • ½ cup light brown sugar, packed
  • ¾ teaspoon salt
  • ¼ teaspoon baking powder
  • 12 tablespoons unsalted butter, melted
  • 1 (14-ounce) can sweetened condensed milk
  • 4 large egg yolks
  • 2 tablespoons heavy cream
  • ⅔ cup fresh lemon juice (about 45 lemons)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine flour, granulated sugar, brown sugar, salt, and baking powder. Stir in melted butter until crumbly.
  3. Press two-thirds of the mixture into the prepared pan and bake for 15 minutes until golden.
  4. In another bowl, whisk together sweetened condensed milk, egg yolks, heavy cream, and salt until combined. Gradually whisk in lemon juice until smooth.
  5. Pour the lemon filling over the hot crust and sprinkle remaining crumb mixture on top. Bake for an additional 15-20 minutes until golden brown and set.
  6. Allow to cool completely before refrigerating for at least four hours before slicing.
