  • 1 cup icing sugar (for glaze)
  • 1/4 cup freshly squeezed lemon juice (for glaze)
  • 1 teaspoon vanilla extract (for glaze)
  • Milk, as needed (to adjust glaze consistency)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In one bowl, whisk together flour, baking powder, and salt. In another bowl, mix yogurt, sugar, eggs, lemon zest, vanilla extract, and oil until smooth.
  3. Gradually combine the wet ingredients with the dry ingredients without overmixing.
  4. Coat blueberries in flour and gently fold them into the batter.
  5. Pour the batter into the prepared pan and bake for 50–70 minutes or until a toothpick inserted comes out clean.
