- ½ cup lemon juice (about 3–4 lemons)
- 1½ cups fresh blueberries
- 1 tablespoon all-purpose flour (to toss with blueberries)
- 8 oz full-fat brick cream cheese (softened)
- ½ cup unsalted butter (softened)
- 3½ cups confectioners’ sugar
- 1 tablespoon heavy cream
- 1 teaspoon pure vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (177°C). Grease three 8-inch round cake pans, lining the bottoms with parchment paper.
- In a mixer bowl, beat softened butter until creamy; add sugars and mix until combined. Add eggs and vanilla; mix well.
- In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet mixture.
- Mix in buttermilk, lemon zest, and lemon juice until just combined. Gently fold in blueberries tossed with flour.
