  • ¾ cup buttermilk (room temperature)
  • 2 tablespoons lemon zest
  • ½ cup lemon juice (about 34 lemons)
  • 1½ cups fresh blueberries
  • 1 tablespoon all-purpose flour (to toss with blueberries)
  • 8 oz full-fat brick cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 3½ cups confectioners’ sugar
  • 1 tablespoon heavy cream
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (177°C). Grease three 8-inch round cake pans, lining the bottoms with parchment paper.
  2. In a mixer bowl, beat softened butter until creamy; add sugars and mix until combined. Add eggs and vanilla; mix well.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet mixture.
  4. Mix in buttermilk, lemon zest, and lemon juice until just combined. Gently fold in blueberries tossed with flour.
  5. Divide batter among prepared pans and bake for 22–26 minutes or until a toothpick comes out clean. Cool completely before frosting.
