- 1 cup raspberries (fresh or frozen)
- 3 tablespoons granulated sugar
- 2 tablespoons cornstarch
- 2½–3 cups all-purpose flour
- ⅔ cup warm dairy-free milk
- ½ cup vegan butter
- 3 tablespoons sugar
- 3 teaspoons instant dry yeast
- ground cinnamon
- ground nutmeg
- Pinch of salt
Instructions
- To make the jam, combine raspberries, sugar, cornstarch, and a splash of water in a saucepan. Simmer until thickened.
- For the dough, mix flour, warm milk, vegan butter, sugar, yeast, spices, and salt in a bowl. Knead until smooth.
- Roll out the dough into a rectangle and spread cooled jam on top. Roll into a log and twist.
- Place in a loaf tin and let rise until puffy.
- Bake at 170°C (340°F) for 30–40 minutes until golden. Optionally glaze with melted sugar while warm.
