  • 1 cup raspberries (fresh or frozen)
  • 3 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 3 cups all-purpose flour
  • ⅔ cup warm dairy-free milk
  • ½ cup vegan butter
  • 3 tablespoons sugar
  • 3 teaspoons instant dry yeast
  • ground cinnamon
  • ground nutmeg
  • Pinch of salt

Instructions

  1. To make the jam, combine raspberries, sugar, cornstarch, and a splash of water in a saucepan. Simmer until thickened.
  2. For the dough, mix flour, warm milk, vegan butter, sugar, yeast, spices, and salt in a bowl. Knead until smooth.
  3. Roll out the dough into a rectangle and spread cooled jam on top. Roll into a log and twist.
  4. Place in a loaf tin and let rise until puffy.
  5. Bake at 170°C (340°F) for 30–40 minutes until golden. Optionally glaze with melted sugar while warm.
