  • 1 pound ground beef (80/20 blend)
  • 4 slices bacon
  • 1 large onion, sliced
  • ½ cup Irish stout (Guinness recommended)
  • ½ cup sharp cheddar cheese, grated
  • 4 brioche burger buns
  • ½ cup sour cream
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels.
  2. In the same skillet, sauté the sliced onions until caramelized (10–15 minutes). Stir in Irish stout and simmer until reduced by half. Season with salt and pepper.
  3. In a mixing bowl, combine ground beef with Worcestershire sauce, salt, and pepper. Form into four patties.
  4. Grill or cook patties over medium-high heat for about 3–4 minutes per side. Top each patty with cheddar cheese during the last minute of cooking to melt.
  5. Mix sour cream and Dijon mustard in a small bowl for the sauce.
  6. Toast the insides of the brioche buns in butter until golden brown.
  7. Assemble by layering each patty on a bun with bacon, caramelized onions, and sauce.
