- 8 skinless, boneless chicken thighs
- 2 tbsp cornflour
- ½ tsp salt
- ½ tsp pepper
- 2 tbsp vegetable oil
- 1 tbsp unsalted butter
- 4 cloves garlic, minced
- 110 g honey (1/3 cup)
- 80 ml chicken stock (1/3 cup)
- 1 tbsp rice vinegar
- 1 tbsp light soy sauce
Instructions
- Toss chicken thighs in a bowl with cornflour, salt, and pepper until fully coated.
- Heat vegetable oil in a skillet over high heat and add chicken. Cook for 4-5 minutes on one side until golden brown, then flip and cook for another 2 minutes.
- Add butter to the pan and let it melt before stirring in minced garlic. Reduce heat to medium.
- In a separate bowl, mix honey, chicken stock, rice vinegar, and soy sauce until smooth; pour into the skillet.
- Increase heat to bring sauce to a boil; then reduce and simmer for about 4-5 minutes until thickened and chicken is cooked through.
- Serve garnished with fresh parsley and chili flakes over boiled rice.
