Ingredients
- 1 ½ cups grated zucchini
- ⅓ cup melted coconut oil
- ½ cup honey or maple syrup
- 2 eggs (or vegan substitutes)
- 1 ¾ cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon fine-grain sea salt
Instructions
- Preheat oven to 325°F (163°C) and grease a 9” x 5” loaf pan.
- In a large bowl, whisk together melted coconut oil and honey until smooth. Add eggs and mix well.
- Stir in milk, baking soda, ground cinnamon, sea salt, and nutmeg until combined.
- Fold in grated zucchini and gradually add flour until just mixed; lumps are okay.
- Pour batter into the prepared pan and sprinkle with extra cinnamon.
- Bake for 55-60 minutes, or until a toothpick comes out clean.
- Cool in the pan on a wire rack before slicing.
