  • 2 cups cooked jasmine rice
  • 8 oz grape tomatoes
  • 5 oz fresh spinach
  • 15 oz canned chickpeas
  • 6 oz feta cheese
  • Fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon red pepper flakes
  • 3 tablespoons freshly squeezed lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Season chicken thighs with oregano, paprika, salt, and red pepper flakes.
  2. Heat oil in a skillet over medium heat. Cook chicken for about 10 minutes until fully cooked (165°F/74°C). Set aside.
  3. In the same skillet, sauté tomatoes and garlic for 2 minutes. Add spinach until wilted.
  4. Stir in rice and chickpeas; mix in lemon juice and remaining tomatoes.
  5. Prepare feta mixture by combining feta cheese with olive oil and lemon juice.
  6. Incorporate half of the feta mixture into the skillet with rice before adding sliced chicken back to reheat.
