Ingredients
- 12 jumbo pasta shells
- 1½ cups ricotta cheese
- 1 cup shredded mozzarella cheese (plus extra for topping)
- ½ cup grated parmesan cheese
- 1 large egg
- 1 cup fresh spinach, chopped (or ½ cup thawed frozen spinach)
- 2 cups marinara sauce
- Olive oil, garlic, salt, and pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Cook jumbo pasta shells in boiling salted water until al dente; drain and cool slightly.
- Sauté minced garlic in olive oil, then add spinach until wilted. In a bowl, mix ricotta, mozzarella, parmesan, egg, nutmeg (optional), and sautéed spinach until combined.
- Spread marinara sauce in a baking dish. Stuff each shell with the filling and place them seam-side up in the dish.
- Cover with remaining marinara sauce and sprinkle with additional mozzarella cheese.
- Cover with foil and bake for 25 minutes; uncover and bake for an additional 10 minutes until bubbly.
