Ingredients

  • 500 g (4 cups) bread flour
  • 7 g (2 1/4 teaspoons) instant yeast
  • 2 teaspoons kosher salt
  • 480 g (2 cups) lukewarm water
  • 6 tablespoons extra-virgin olive oil, divided
  • Flaky salt for topping
  • Chopped rosemary for topping (optional)

Instructions

  1. In a mixing bowl, combine flour, yeast, and salt. Create a well in the center and add lukewarm water. Stir until a shaggy dough forms.
  2. Drizzle 30 g olive oil on top of the dough and coat it before covering the bowl with plastic wrap. Refrigerate for 18 to 72 hours.
  3. Preheat your oven to 425°F (218°C). Grease a baking pan and add another 30 g of olive oil.
  4. Shape the dough into a ball and transfer it to the baking pan, ensuring it's coated in oil.
  5. Allow the dough to rise uncovered for 3-4 hours until it nearly fills the pan.
  6. Create dimples on top of the dough, drizzle with remaining olive oil, sprinkle with rosemary if desired, then bake for 25-30 minutes until golden brown.
  7. Cool slightly before slicing and serving.
