  • ½ bunch kale, stems removed and leaves chopped
  • ⅓ cup heavy cream
  • 3 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Heat olive oil in a large stockpot over medium heat. Add crumbled Italian sausage and cook until browned (3-5 minutes). Drain excess fat if necessary.
  2. Stir in minced garlic, diced onion, and Italian seasoning; cook until onions are translucent (2-3 minutes). Season with salt and pepper.
  3. Whisk in flour until combined; cook for 1 minute until lightly browned.
  4. Add chicken stock, tomato sauce, and optional Parmesan rind; bring to a boil then reduce heat to simmer for 10 minutes.
