  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • Fresh parsley for garnish

Instructions

  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a large skillet and sear chicken until golden brown (4-5 minutes per side). Remove and set aside.
  2. In a medium saucepan, bring chicken broth to a boil. Add rice, reduce heat, cover, and simmer for 15-18 minutes. Fluff and set aside.
  3. In the same skillet, melt butter and whisk in flour until golden. Gradually add milk and broth while whisking until smooth. Stir in seasonings and cheeses until melted.
  4. Return chicken to the skillet, spoon sauce over it, cover, and simmer on low for about 10 minutes until cooked through.
  5. Serve over rice garnished with fresh parsley.
