  • 1 tablespoon ranch seasoning mix
  • 4 ounces cream cheese
  • 3 slices cooked bacon, crumbled
  • 1 cup sharp cheddar cheese
  • 4 large russet potatoes
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, place chicken breasts and sprinkle with ranch seasoning. Add cream cheese on top. Cook on HIGH for 2.5-3 hours or LOW for 4-5 hours until chicken is tender.
  2. Shred the chicken in the slow cooker using two forks and stir in bacon and cheddar cheese.
  3. Preheat oven to 425°F. Wash potatoes, rub with olive oil, season with salt and pepper, and bake on a foil-lined baking sheet for 45-60 minutes until fork-tender.
  4. Once cooled slightly, cut a slit along the top of each potato and fluff the insides with a fork.
  5. Generously stuff each potato with the crack chicken mixture and add toppings as desired.
  6. Broil for about 5 minutes until cheese is melted and bubbly.
