  • 1 medium yellow onion, diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 2 lbs ground beef
  • 1 lb Yukon Gold potatoes, cut into 1-inch pieces
  • 4 carrots, sliced
  • 1 can green beans, drained
  • 1 can diced tomatoes with juices
  • 46 cups beef broth
  • Italian seasoning

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Sauté onion and celery for 2–3 minutes until soft; add garlic and cook for another minute.
  2. Add ground beef and cook until browned; break apart clumps as needed.
  3. Stir in potatoes, carrots, green beans, diced tomatoes, tomato paste, and seasonings. Start with 4 cups of beef broth; add more if needed.
  4. Bring to a boil, then reduce heat and simmer uncovered for 14–16 minutes until vegetables are tender.
  5. Serve hot with optional toppings like cheese or green onions.
