  • 32 ounces small curd cottage cheese
  • 16 ounces shredded Colby Jack cheese
  • 1 pound cooked bacon (chopped)
  • ¾ cup all-purpose flour (or gluten-free substitute)
  • 10 ounces frozen chopped spinach (thawed and drained)
  • 1 cup diced red bell pepper
  • ½ cup minced yellow onion

Instructions

  1. Preheat the oven to 350°F and lightly grease a 9×13-inch baking pan.
  2. Cook the bacon until crispy, then chop into bite-sized pieces and set aside.
  3. In a large bowl, whisk together the eggs and add cottage cheese, melted butter, spinach, half the bacon, half the Colby Jack cheese, red bell pepper, and onion. Mix well.
  4. Sprinkle flour, seasoned salt, black pepper, and half the Parmesan over the egg mixture; stir until fully combined.
  5. Pour into the prepared pan. Top with remaining cheeses, bacon, red bell pepper, and black pepper.
  6. Cover with foil; bake for 40 minutes. Remove foil; bake an additional 20–30 minutes until set in the center.
  7. Let cool for 15–20 minutes before slicing and serving.
