  • 3 cups (375g) all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon kosher salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 3/4 cup (170g) unsalted butter, room temperature
  • 3 cups (375g) confectioners' sugar, sifted
  • 1/3 cup (67g) light brown sugar, packed
  • 1 1/2 teaspoons cinnamon
  • 23 teaspoons whole milk (as needed for consistency)

Instructions

  1. Preheat your oven to 325°F (163°C) and line two baking sheets with parchment paper.
  2. In a bowl, mix granulated sugar and cinnamon for coating; set aside.
  3. Beat together softened butter, shortening, sugar, eggs, and vanilla until creamy. Gradually add flour, cornstarch, salt, baking powder, and cinnamon until dough forms.
  4. Scoop dough into balls, flatten slightly, roll in cinnamon sugar, and place on baking sheets.
  5. Bake for 12-14 minutes until lightly golden. Allow cookies to cool completely before frosting.
  6. For the frosting, beat together room temperature butter, confectioners' sugar, brown sugar, and cinnamon until fluffy. Add milk as needed for consistency.
