Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar (for filling)
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon

Instructions

  1. In a large bowl, cream together the softened butter and sugar until light and fluffy. Add eggs and vanilla extract; mix until smooth.
  2. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet mixture until just combined. Chill dough for at least 30 minutes.
  3. For the filling, beat cream cheese until smooth; mix in sugar and vanilla extract.
  4. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop about 1 tablespoon of chilled dough, flatten it, place a teaspoon of filling in the center, cover with more dough, sealing edges well.
  5. Bake for 12-15 minutes until lightly golden. Cool slightly on the sheet before transferring to a wire rack.
  6. Roll warm cookies in cinnamon-sugar mix before serving.
