  • 1.5 cups basmati rice (uncooked)
  • 3 cups chicken stock
  • ¼ cup crumbled feta cheese
  • 2 tablespoons Greek seasoning
  • 2 teaspoons smoked paprika
  • 1 teaspoon seasoning salt
  • ½ teaspoon turmeric
  • ¼½ teaspoon cayenne pepper (to taste)
  • 1 medium red onion, thinly sliced
  • ¾ cup red wine vinegar (or apple cider vinegar)
  • 2 teaspoons sugar
  • 2 teaspoons kosher salt
  • Additional feta cheese
  • Pickled red onions
  • Tzatziki sauce (store-bought)
  • Toom garlic dip
  • Fresh parsley
  • Warm pita bread

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, mix smoked paprika, seasoning salt, turmeric, and cayenne pepper.
  3. In a heat-safe bowl, combine vinegar, sugar, and salt. Microwave until sugar dissolves. Add sliced red onions and refrigerate.
  4. In a casserole dish, layer diced chicken with half the seasoning mix and Greek seasoning.
  5. Top with rice, zucchini, and grape tomatoes.
  6. Whisk together chicken stock and remaining seasoning mix; pour over casserole.
  7. Bake covered for 40 minutes; uncover and bake another 10-20 minutes until rice is tender.
  8. Fluff casserole and top with feta cheese, pickled onions, tzatziki sauce, and parsley before serving.
