  • 2 tbsp butter
  • 2 boneless, skinless chicken breasts (or 2 cups diced rotisserie chicken)
  • 2½ cups chicken broth
  • 1¼ cups white long-grain rice (uncooked)
  • 2 cups fresh broccoli florets (or thawed frozen broccoli)
  • 10.5 oz condensed cream of chicken soup
  • ½ cup milk
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup crushed Ritz crackers
  • 2 tbsp melted butter

Instructions

  1. Preheat oven to 350°F (175°C). Cut chicken into bite-sized pieces and season with Italian seasoning, salt, and pepper.
  2. In a large pot, melt butter over medium heat. Cook chicken until golden brown. Remove and set aside.
  3. Add chicken broth, olive oil, and rice to the pot; bring to boil. Reduce heat and simmer for 6 minutes.
  4. Add broccoli; cover and cook for another 9 minutes until rice is tender.
  5. Stir in cooked chicken, cream of chicken soup, milk, sour cream, half of the cheese; mix well.
  6. Transfer mixture to a greased casserole dish; top with remaining cheese and cover with foil. Bake for 15 minutes.
  7. Combine melted butter with crushed Ritz crackers; sprinkle over casserole and bake uncovered for an additional 10 minutes until golden brown.
