  • 1/4 cup butter
  • 1 medium onion, diced
  • 810 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup chicken broth
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 3/4 cup Parmesan cheese, grated
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 350°F.
  2. Thinly slice the Yukon gold potatoes (1/8 inch) using a mandoline slicer or sharp knife.
  3. In a saucepan over medium heat, melt butter and sauté onion and garlic until soft. Stir in flour to create a roux.
  4. Gradually add milk and chicken broth, stirring until slightly thickened. Mix in cheeses until combined.
  5. Layer potato slices and cheese sauce in a greased casserole dish three times, finishing with cheese sauce on top.
  6. Cover with foil and bake for 30 minutes; then remove foil and bake for an additional 35–45 minutes until golden brown.
