  • 150g granulated sugar
  • 100g brown sugar
  • 3 eggs
  • 250g all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 230g freshly shredded carrots
  • 460g cream cheese
  • 150g mascarpone
  • powdered sugar
  • vanilla extract

Instructions

  1. Preheat your oven to 175°C (350°F) and prepare an 11×16-inch sheet pan.
  2. In a bowl, mix eggs, vegetable oil, granulated and brown sugars until smooth.
  3. Sift in flour, baking powder, baking soda, cinnamon, and salt; fold gently.
  4. Incorporate shredded carrots into the batter.
  5. Bake for about 25 minutes until a toothpick comes out clean.
  6. Cool completely before cutting with a cookie cutter; assemble layers with frosting between each cake round.
  7. Decorate with colored frosting if desired.
