  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 8 corn tortillas
  • 4 cups shredded cheese (cheddar & Monterey Jack)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook the ground beef with diced onion and minced garlic until browned. Drain excess fat.
  3. Stir in enchilada sauce, diced tomatoes, black beans, cumin, chili powder, salt, and pepper; simmer for 5 minutes.
  4. Layer half of the corn tortillas in the baking dish followed by half of the beef mixture and half of the cheese. Repeat layers.
  5. Bake for about 25 minutes until cheese is bubbly and golden.
  6. Let rest for a few minutes before slicing and serving.
