- 2 lbs chuck roast
- 1 cup pearl barley
- 3 tablespoons olive oil
- 1½ cups chopped carrots
- 1 cup chopped celery
- 2 cups chopped yellow onion
- 2 (32 oz) cartons low-sodium beef broth
- Fresh herbs (rosemary and thyme)
Instructions
- Heat olive oil in a large pot over medium-high heat. Sear the beef chunks until golden brown; set aside.
- In the same pot, sauté carrots, celery, and onion for about 3 minutes until softened.
- Stir in tomato paste and garlic; cook for an additional minute.
- Add broth, soy sauce, Worcestershire sauce, herbs, salt, pepper, and return the beef to the pot.
- Simmer for 45–60 minutes until the beef is tender.
- Stir in pearl barley and cook for another 45–60 minutes until barley is tender.
- Garnish with fresh parsley before serving.
