  • 1 teaspoon baking powder

  • 2 cups grated zucchini
  • 1 cup diced apple
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 325°F (163°C) and grease two 8 x 4-inch loaf pans.
  2. Grate the zucchini and dice the apple.
  3. In a large bowl, mix flour, cinnamon, salt, baking powder, and baking soda.
  4. In another bowl, whisk together eggs, vegetable oil (or applesauce), vanilla extract, white sugar, and brown sugar.
  5. Combine wet and dry mixtures; stir until just combined.
  6. Fold in grated zucchini, diced apple, and walnuts.
  7. Pour batter into prepared pans and bake: Mini loaves for 35-40 minutes, Full-sized loaves for about 55 minutes.
